The cc that you can run on that turbo is the big issue or concern are you running rotory or inline what is the the compression ratio, in my opinion I think that 500 cc is
by far the max and possibly a little much from . We have used that that same S300 turbo and we had a really good supply system on a inline pump pumping 400ish cc and
the turbo was maxed out , we then pulled off and put on a different engine with less fuel and a little higher compression and the turbo was able to perform very well
and maxed it out again, the best advise I can give you without knowing all the details is watch your boost and EGT's and you will know the limit.

Inline A pump. Im at 380 cc right now. Was wondering if I should try to get more

We run a similar set up on a 466. We're running a s366 with a good A pump about 600cc of fuel. With our timing where it's at makes a hell of a good running 466. I'd suggest fire rings though if not done already cause it'll blow the head gasket.

Our class runs the same rules that you described, and that turbo is our "box" turbo. I used to run a Harts Model 100 pump that was supposedly capable of 500+ cc. It ran good with that combination, but my egt's were about as hot as I could stand (usually over 1800 at 32 degrees timing). More fuel would have helped. Since then we've switched to an A-Pump and added a factory type innercooler. Now at 650+ cc I can run more in the 1600 degree range. Of course the innecooler plays a big part in all that, but again, more fuel is working fine with that turbo.
