wondering what class would be a decent option for a 1570 504 8.3? Don't know much about that motor or how easy it is to play with, any thoughts appreciated.

Are you taking it farm pulling or want to build it bigger? Even in farm pulling the powershift needs some adjustments to hold if you have it running good. And if you're going bigger than farm pulling find a Case with a manual 8 speed transmission.

They can be built for any class. Pretty easy to play with they’re easy to work on, just a basic wet sleeve 12 valve mechanically injected diesel. They have a Bosch A pump which is a good advantage in any stock looking pump classes. As said above it depends what your looking to build. Decent motor, heads aren’t great for 3000rpm classes. Doesn’t take much to get to 531 or 540 cubes, 4 3/4 Deere pistons or stroke it 3/8”. It’s best to talk to a true case builder and hear their knowledge, lots different compared to red or green.
