How does a springer clutch work compare to a slipper??

A springer gives you static pressure on the pressure plate so you have pedal all the time. No need to rev er up to engage the clutch.

Can a springer be multi disk and can you manually slip it to hold rpms at the other end

Yep, they are multi disk clutches. You can slip it outta the hole depending on your weight setup. Sounds like you need to find some more ponies or a slower gear if you are thinking you have to slip it on the big end to keep rpms...
