Without modifications neither option is a great choice and neither will pull that kind of weight up a hill in a expeditious fashion.
The 12V Cummins with a few small modifications will give you a lot more reliable power (500hp+) as compared to the 7.3l Ford and the manual NV4500/NV5600 trans will hold up just fine but might need to move to a double disc clutch.
